This Japanese Yanagiba or Sashimi kitchen knife from Tsubazo features a double-sided ground blade made of stainless Daido 1K6 steel with a hammered finish. The handle, made of pakkawood with a plastic ferrule, fits perfectly in the hand thanks to its oval shape, making it ideal for both right- and left-handed users. Typically, the Sashimi is used for preparing and portioning raw fish. Not suitable for dishwasher use.
