Carbon steel as knife steel

The big advantage of carbon steel in knives: most of these grades are very easy to sharpen, grind, and work. Heat treatment and forgeability are also significantly easier than with high-alloy steels. Blades made from carbon steel require special care and attention. They should be thoroughly washed and dried after use. For longer storage, it is advisable to lightly oil the blade.
